A. Having shared many meals with Joe, it would appear that he enjoyed meat: With beef steaks- the thickest cuts possible and very rare. While grilling many times for him, he would be looking over my shoulder or under my arms to ensure that I would not over-cook his steak. He also enjoyed pork meat - pork chops with the bone in and carnitas. Also turkey meat-I can recall that after his mother passed away several years ago, to continue her tradition of providing him with a supply of white turkey meat for sandwiches, he was cooking his own turkey around Thanksgiving, since after being with us for the Holiday he realized that after we were done distributing amongst the family the leftovers, seldom was there any left for him.
