Baby Arlo's Caramel Peanut Butter Legacy Cookie

When my friend Miranda was pregnant, she was intent on creating an amazing cookie recipe to pass down through her family from generation to generation. At seven months and after 40 batches of cookies, she'd found it and it IS AWESOME!!! This is a close approximation. I've been told this is as close as I'm allowed to get. BABY ARLO'S CARAMEL PEANUT BUTTER LEGACY COOKIE INGREDIENTS * 1 (14 ounce) can sweetened condensed milk * 3/4 cup peanut butter * 1 egg * 1 teaspoon vanilla extract * 2 cups buttermilk baking mix * 1/2 cup white sugar * 14-ounce bag of caramels (I like Kraft) DIRECTIONS 1. Preheat oven to 350 degrees F (175 degrees C). 2. In a large bowl, beat condensed milk, peanut butter, egg and vanilla until smooth. Add biscuit mix, and mix well. Chill at least 1 hour. 3. Shape dough into 1 inch balls. Roll the balls in sugar. Place 2 inches apart on ungreased baking sheets. Flatten balls slightly with a fork. 4. Unwrap caramels and place one in the center of each ball of dough. 5. Bake for 8-10 minutes, or until lightly browned (DO NOT OVERBAKE). Cool. Store in a tightly covered container at room temperature.
